Create this deeeeelish recipe in less than 45 minutes and feed a bunch of happy people (or just yourself and make some tasty upcoming lunches or dinners).

You will need: coconut oil, 1 small red onion, 2 cloves of garlic, 3 chicken breasts, Himalayan rock salt, 1 tsp chilli powder, 1/4 tsp cayenne pepper, 1 tbsp balsamic or apple cider vinegar, 3 x green peppers, 6 slices of provolone cheese (I did consume some during food prep because it's soooo tasty!).

Preheat oven to 180, heat coconut oil in a large frying pan, cook onion and garlic, add chopped chicken breast until brown. Add in your spices, stir in vinegar and coat chicken.

Chop peppers in half, remove seeds etc and lay in a baking dish filled with 4 tbsp of water. Fill each pepper half with chicken, cover tightly with tin foil and bake for 25 minutes. Remove tin foil, place cheese on each pepper half, cook for a further 5 minutes then serve with a salad of your choice. I went for cos lettuce and cherry tomatoes with an olive oil and balsamic vinegar dressing. Devour!
