Hands up who loves rice? It used to be one of my staples until I realised I didn't need it everyday and that I can fuel myself with an array of vegetables and good fats. 

This post was inspired by a few of my clients who are on the road to getting leaner for their European or exotic summer holidays coming up to escape NZ winter. Lucky!

They are particular rice lovers so I'm sharing with them, and you, a deelish cauliflower rice recipe that you can put with your favourite curries and stir fries or with a fish/meat selection.

I fry up a whole cauliflower head then leave it in a big container in my fridge once it's cooled down to store for meals. I promote easy food prep because life is busy and personally, I'd rather spend my time training and lifting heavy weights or out and about with friends than slaving over my stove.

So here's my cauliflower rice recipe: 1 head cauliflower, 2 garlic cloves, Himalayan rock salt, ground coriander, cayenne pepper (because I like it hot!), coconut oil.  I don't measure my serves, just what tastes good.

Throw your roughly chopped cauliflower into a food processor and blend until it resembles rice. I don't have the luxury of a food processor so I use my blender and whizz up a couple of handfuls at a time. Heat 1 tbsp of coconut oil in a large frying pan and add your chopped garlic,  after a couple of minutes add your cauliflower then stir in your seasoning and keep stirring as it cooks for about 10 minutes. Leave to cool. Once cool, transfer into your storage container and keep in the fridge for lunches and dinners. It keeps for 5-6 days and is soooooo tasty!
