Like a lot of people these days, I'm pretty time poor and when I get home after training, I need to eat immediately!

Yesterday I delved into my fridge and pulled out my cauliflower rice, a head of broccoli, a few green beans I'd forgotten about, my trusted bag of baby spinach and I threw together a salmon supreme.

I buy big pieces of salmon, divide into 6 pieces, put them in sandwich bags and throw them in the freezer. Then I have around 100-130g portions of salmon full of beautiful nourishing Omega 3's to make up a good protein and fat component for my meals.

Recipe: 1 piece of salmon, cauliflower rice, broccoli, spinach, green beans, cayenne pepper, coconut oil.

Steam your broccoli head and set aside some of it to use for lunches over the next 2 days. Throw a table of coconut oil into a frying pan and cook your salmon for around 5 minutes chopping it into small pieces as you go. Add in the green beans, cook for another 5 minutes then finish off with a good portion of cauliflower rice, spinach and broccoli at the last minute and season with a little (or a lot) of cayenne. 15 minutes from prep and I'm satisfying that post training hunger! So good.
