I love chia seed pudding for breakfast or as a tasty snack during the day.

Chia seeds are packed full of Omega 3 essential fatty acids, a great source of protein and high in fibre too. I'm always a fan of high protein foods to help keep you fuelled during the day.

Because this recipe is mixed with coconut cream too, you have a lovely mix of your essentials: protein, fat and carbs in one handy little meal or snack.

I'm all about this dish because it's so freaking simple to make and keeps in your fridge for when the hunger strikes.


4-6 serves 1.5 cups Kara coconut cream, 1 cup water, 1/2 cup chia seeds, 2 scoops Arbonne Vanilla Protein, 4 tbsp shredded coconut, cinnamon to taste. Mix all of your ingredients together in a glass bowl, let it set for an hour then serve. Sprinkle some cinnamon on each serving and add your own topping to include mixed berries and/or peanut butter as an idea. As the mixture thickens over the 2-3 days, add in a little water and cinnamon each time.
