You want tasty, quick, easy - you make the tasty chicken fajita!

My partner and I devoured this amazingness in the evening sun on a Friday night with a red wine and it was exactly what we needed to close off a working week and. Super tasty and super healthy.

I even found in my local supermarket a preservative free fajita mix so I coated my chopped chicken thighs in the mix before cooking.

Recipe: 1 tbs coconut oil, 4 x chicken thighs, 1 crispy cos lettuce, cherry tomatoes, 1 x avocado, fresh coriander, 1-2 garlic cloves, fresh lime juice, 1 x yellow pepper, cheese of choice (mine was gruyere).

Chop up the chicken thighs, put into a bowl and mix in your preservative free fajita mix or create your own with chilli, coriander, paprika and cumin.

Chop up your garlic cloves, yellow pepper into thin strips and 2 big handfuls of fresh coriander. Fry the garlic in 1 tbsp of coconut oil for 1 minute before adding your chicken and coriander. Cook on a low heat, after 5 minutes add in your pepper. As the chicken cooks, chop your cherry tomatoes into 4 (extremely easy salsa) put into small bowl. Wash your cos lettuce leaves, dry and put onto a plate to create your fajita cups. Grate cheese into a small bowl (I didn't weight it out or measure but we had about 2 match box sized pieces each)

Guacamole: mash 1 ripe avocado in a bowl, add some lime juice, finely chopped fresh coriander, paprika and chilli flakes. I didn't measure either, I just tasted until happy with the result.

As you're prepping your fajita fillings, make sure the chicken is cooking evenly and flavours are distributing well.

20 minutes later. Serve and devour. So easy, sooooo tasty!
